If you have been following me on instagram you would have seen me BBQ’ing up a storm on our new engagement pressie. I absolutely love lamb (as you would have noticed from this tasty cumin rubbed panfried lamb) there is nothing better than mid week (or weekend) throwing everything onto sizzling BBQ hot plates and not worrying about anything else.
This is under a 7 ingredient dish and went down really well with the mister! It is a lovely dish to throw together for your mates.
BBQ’d butterflied lamb rubbed in olive oil a few rosemary leaves and garlic, BBQ’d eggplant and haloumi (similar to my summer salad here) served on a bed of watercress, scattered with fresh mint leaves and a good squeeze of lemon. Pomegranate seeds would also go really well scattered over, though they didn’t have any available when I was scouting the local.
Not only does it take less than 30 mins to make, you only have one BBQ plate to clean (no endless scrubbing of pans) my idea of heaven!
Why is it good for you:
Organic Lamb is great source of good quality protein with all of the essential amino acids which will nourish, replenish and repair tissue, skin and muscles. Organic entails that the lamb has none of the added hormones, antibiotics and so on, which have been known to disrupt our own hormones.
Eggplants are a great source of folate (this helps treat low iron in the blood), fibre (digestion) and some magnesium which is great for sleep.
Watercress is a great source of chlorophyll (the green pigment that gives it the colour), it is perfect to help your body detox and cleanse. By eating watercress will help your body have an alkaline environment, thus helping your body work at its best.
