As a kid we always called porridge “podga” it was filling, cheap and nourishing and also a quick an easy breakkie any day of the week. I took my family staple and matured it. By adding grated green apple, a dusting of cinnamon and a sprinkling pepitas and sesame seeds, plus a drizzle of honey, the combination literally took this humble “podga” to the next level and also improved its nutritional value per serve.
It is a fantastic Autumnal and Winter breakfast, it is a brilliant mix up to your weekly breakfast routine.
Porridge oats are fabulous slow release energy boosters and great to kickstart your day, they contain vitamin B’s which is known to help improve your mood, anxiety and PMS. A high level of soluble dietary fibre which is great for your circulation and for digestion. As with many seeds, pepitas (pumpkin) are a good source of magnesium and zinc, crucial vitamins to aid in digestion, nutrient absorption, mood and sleep. Sesame seeds are the highest source of calcium great for building bones, improving hair and nails. Apple is high in soluble and insoluble dietary fibre which is perfect to help maintain a healthy digestive tract (be sure to include the apple skin).

2 Cups Organic Oats
2 Cups Water
Pinch Sea salt
2 Green Apples, grated
1.5 Tsp Cinnamon Powder
1/4 Cup Pepitas
2 Tbsp Sesame Seeds
1/2 Cup Almond Milk (can use normal milk too)
Optional: 1 Tbsp Honey to serve or maple syrup if vegan

- In a medium sauce pan, add oats, pinch of salt and water, medium heat let them gently simmer to a boil until mushy. Should be around 5-7 minutes.
- Add cinnamon, apple and pepitas and mix well. Take off heat.
- Pour into two suitable bowls and cover with about 1/4 cup of milk. Sprinkle with sesame seeds and little more cinnamon if you like. Drizzle with honey or maple syrup for extra sweetness.
