These little bake free flapjack numbers, not only don’t require an oven. They are just fabulous mid morning or mid afternoon snacks to keep you on track in a healthy way for the rest of the day. There is absolutely nil baking required and they really are scrumptious. Also great for long car journeys and to stop episodes of “hangry” popping up! Easy to make too.
All you need is measuring cups and a mixing bowl.
1.5 Cups Quinoa Flakes
1/2 Cup Desiccated Coconut
1/4 Cup Sunflower Seeds
1/4 Cup Crushed Nuts (I used Walnuts, you can use almonds)
12 Dried Apricots, chopped up
4 Tbsp Ground Flax Seed
1/2 Tsp Seasalt
1/4 Cup Coconut Oil
1/2 Cup Peanut Butter
1/4 Cup Honey
1. In a large mixing bowl, add all dry ingredients; quinoa flakes, desiccated coconut, sunflower seeds, crushed nuts, apricots, flax seed and sea-salt.
2. In a small pan add, coconut oil, honey and peanut butter and melt gently.
3. Pour small pan into mixing bowl and mix all ingredients together until all dry ingredients are covered.
4. Line a shallow baking tray and gently pour ingredients in. Flatten down and pop in the fridge for an hour or two to cool. Cut into pieces and pop in a dry container. Keep refrigerated.
