It is all a little bit bananas here at Rosedog HQ. With a heap of bananas that were going brown in the fruit bowl, it was time to whip out some tasty little banana muffins. A real case of through all in the mixing bowl and whack in the oven. Would highly recommend investing in a silicon muffin tray, saves the scraping and sticking at the end of the bake.
Hope you enjoy these little numbers, the recipe makes about 9 muffins. A great get up and go breakfast for those with little time.
4 Very Ripe Bananas, mushed
1 Cup Sugar
1 Egg, beaten
2 Cups self raising flour
2 Tbsp Milk
1 Tbsp Butter, soft
1. Turn oven to 180c. In a large mixing bowl masher up the bananas (potato masher is a great one for this), add the egg and beat together.
2. Add Sugar, flour, salt, butter and beat into the banana mixture.
3. Add to muffin tin and pop in the oven for 20-25 minutes until brown.
Fantastic straight out of the oven with a good dollop of butter and jam.0
