Have you ever made ice-cream from just using one ingredient? It is the best and most simple way to wow your guests and the best thing is it only takes 2 minutes to make.
You can have this stuff for breakfast, lunch or supper without worrying about the levels of cream, refined sugars and so on. All you need is pre-frozen ripe bananas and a food processor.
Great to go on top of an apple crumble or you can really dress it up with cacao nibs, peanut butter or candied cashews in my case.
Perfect healthy treat for the kiddly-winks.
3 Ripe pre-frozen bananas, roughly chopped
1/4 cup raw cashews, roughly chopped
1 tsp coconut oil
1 tsp honey or maple syrup (for vegans)
- In a food processor add the pre-frozen pieces of banana. Blitz until smooth ice-cream style paste, it does take a couple of minutes so be patient as it will suddenly turn. Can serve just like this or take it to the next level with a topping.
- For the topping in a small sauce pan, add coconut oil, let it melt before add the cashews, toss cashews in coconut oil for a minute before adding the honey. Cook for a further 30 seconds then take of the heat and leave to cool for 10 minutes. Sprinkle on top of ice-cream to serve.
