If you follow my instagram you will see that I have made this delicious eye fillet which was marinaded in hot english mustard, brought to room temperature and then cooked on the BBQ to medium rare (my preference!)
A dead simple recipe to whip up for one person plus you then benefit by having some scrummy lunch time feasts to take to work. It is also the most perfect feast for two any night of the week as it takes no time at all. I picked up my eye fillet from my local famers markets, its grass fed and finished beef. Get on down to your local and support the community but also help the smaller guys.
The great thing about this dish is it takes 25 mins tops to cook, if you are at work and want this mid week, marinade your beef in the morning, bring it out as soon as you return from work, this will bring the meat to room temperature then all you need to do is either get that BBQ cranking on a high heat or inside with a griddle pan.
I loved this beef with a side of sautéed spinach and roast potatoes (see my awesome recipe for these here), will also sit nicely along side some big summery salads, try my eggplant one here or my a big green one here.
Why is this dish good for you:
Organic or grass fed and finished Beef is great source of good quality protein with all of the essential amino acids which will nourish, replenish and repair tissue, skin and muscles. Organic entails that the beef has none of the added hormones, antibiotics and so on, which have been known to disrupt our own hormones.
