Last week I was making my fritters (see the tasty beetroot recipe here). Well the next day I decided to throw in carrot there as well, then I couldn’t be bothered to make fritters, so instead I made one large fritter, made a hole and added an egg to it.
The results were outstanding and I love this recipe to my breakkie-mix-up! You are also getting in about 2 of your 5 a day veggies in early for breakfast.
You can add many things to this nest, I kept it simple and added chilli and cumin and one egg to bind it together. Served with some fresh watercress. But I can imagine feta would go really well with this too.

Beetroot contains lots of important nutrients including vitamins A (peepers), B6 (perfect for PMS), C (Immunity), E (Skin) and K as well as protein, folate, dietary fibre, calcium, iron and potassium. Some preliminary research shows that they have been known to help defend cells against harmful carcinogens. Studies have also shown that they have high levels of anti-inflammatory and antioxidant agents within.
Carrots are rich in beta-carotene too and also vitamin A (good for your eye health) and an antioxidant which helps mop up oxidising free radicals in the body.
Chilli for breakkie i actually a great way to kickstart and stimulate your digestion (read my tips for maintaining healthy digestion here), chilli when in its raw state is a great source of vitamin C, so scatter some raw on top once finished
Organic eggs are a full protein that contain all essential amino acids, ideal to help your body replenish, nourish and heal your skin, tissues and muscles.
Watercress is a great source of chlorophyll (the green pigment that gives it the colour), it is perfect to help your body detox and cleanse. By eating watercress will help your body have an alkaline environment, thus helping your body work at its best.
