I love the simplicity of omelettes, I love mixing and shaking up the ingredients, I love that it will take 15 minutes or less and I love the reliability and guarantee of a wholesome breakkie without the fuss.
This particular omelette was a combination of sautéed onion that had ever so caramelised by frying it slowly in butter, a handful of button mushrooms, followed by fresh baby spinach and finished off with some crumbly blue cheese. Dollop some onion marmalade or homemade tomato sauce on top with some herbs and you have yourself a winning meal.
Why is it good for you:
Eggs are a full protein with all their essential amino acids, designed to help replenish and heal tissue, muscles and great for skin (have them post workout/exercise). Onion are a great anti-inflammatory on the body, there antioxidant (quercatin) helps mop up the oxidation of fatty acids on the body. Mushrooms are a good plant based source of niacin (which is part of the vitamin B group) this has been known to help with anxiety and depression. Spinach is a lovely leafy green packed with folate (fibre) for digestion, vitamins A, C and B6 and potassium great for eye health, low iron (anaemia) and bone health.
