Bubble and squeak is historically known as the left over dish made the next day or evening after a traditional roast dinner on a Sunday in the UK. You would lightly fry all the left over veggies and potatoes into a pattie style frittata looking thing! Topped with a poached or fried egg was how I liked it.

I have recreated a healthier-ish version of this comforting meal, where you do not have to have a Sunday roast to complete this traditional recipe. This scrumptious brunch dish is a must to try out this weekend. I used tasty free range nitrate free bacon from these guys, they deliver Australia-wide and the meat is not frozen.
For my breakfast bubble and squeak, I combined pan crispy fried bacon lardons, Brussels sprouts, mushrooms, red cabbage, a squeeze of lemon, crumbled feta and topped off with a fried egg. The results were mind blowing, so much so that I had to share it.
