I have been mulling over what other fritters I can whip up for a breakfast or brunch feast, so far my sweet potato ones are a winner and are a regular in my kitchen, but I wanted to experiment with broccoli and apply the same way I do it. Before long I am sure I will have tried every vegetable.
The broccoli ones are fabulous and they don’t take long at all to prepare, making great veggie burgers for your vegetarian mates at a BBQ too. All you need is a food processor with a grater option, this is the quick less messy option. But you can grate by hand as well.
Adding crumbled feta and souk spice (highly recommended picking yourself up a packet) to these fritters took them to the next level. Serve on a bed of rocket with some poached eggs, squeeze of lemon, you will have yourself a scrumptious weekday or weekend feast. Designed for not just breakfast but a great lunch or dinner.
