Much like my noodle jars, this throw together dish makes a regular weekly appearance in my kitchen. The beauty of it is you can pop anything in it, add some boiling water and bob’s your uncle you have your own version of a pot noodle, but so much better for you.
The variety was so much more exciting than your standard button mushroom, but equally you can use supermarket bought ones, Harris Farm has a good selection.
My dish was a selection of mushrooms, spinach, shredded chicken and broth made from organic miso paste, chilli and a touch of organic soy, squeeze with lemon and you have a refreshing quick and simple broth that you can make for pack lunches, kids lunch boxes etc. It takes under 10 minutes from start to finish.
Why is this good nourishing and good for you:
Mushrooms are a good plant based source of niacin (which is part of the vitamin B group) this has been known to help with anxiety and depression. They also contain the highest source of immune-boosting antioxidant ergothioneine which is an excellent defence against colds and flu. Spinach is a lovely leafy green packed with folate (fibre) for digestion, vitamins A, C and B6 and potassium great for eye health, low iron (anaemia) and bone health. Chicken is a full protein containing all the essential amino acids, designed to help replenish and heal tissue, muscles and great for skin (have them post workout/exercise). Chilli, lemon and fresh mint are all a good source of vitamin C, which not only will nourish immunity it will aid in digestion.
