Carrot and ginger is wonderfully warming soup, a great combination too. A recipe that is simple, cheap and easy to make. 30 minutes max to whack together. Great if you are feeling a carb free light lunch or supper. Healthy for you too as the ingredients help aid and heal colds, coughs, asthma and even mouth ulcers. 2. Add boiling water, salt, pepper and stock. Bring to the boil then simmer for 25 minutes, until all carrots and onions are soft.
3. Grab yourself a whizz stick and blitz until smooth.
4. Season to taste with a little salt & pepper and perhaps a squirt of honey to sweeten if needed.
