I know a lot of you have been making cauliflower mash time and time again, like myself and I have always forgotten to pop my recipe up for those who are unsure.
It really is such a fabulous lighter alternative to potato mash. It goes really well with a good steak, a perfect replacement for bangers and mash, have with a Sunday roast, alternatively smother on top of your next shepherds pie.
Not only are the humble cauliflowers fabulous for you, they really take to lots of flavours, so you can get really experimental.
I even love the mash for breakkie with a couple of fried eggs and baby spinach on top.
The secret to ethereally smooth mash is whack it in a food processor and blitz the hell out of it.

Cauliflower is super veggie, a good source of vitamin C (although this is loss through cooking, so good source when raw), fibre which is great for your digestion, potassium which helps regulate heart beat and fluid balance, it is also rich in sulphur which helps work as an anti-inflammatory, it is also great to aid digestion and boost immunity.
