You can’t really go wrong with a chai latte. This week on my nutritional medicine course we were learning all about the wonders of herbs and spices.

I thought I would share some of the knowledge and give a go at making my own vegan-friendly chai latte. It contains an abundance of spices to help soothe and heal, I absolutely love a chai all year round.
*Spices can offer many healing qualities which are both culinary and medicinal. The combination of spices that are used for chai are carminative, meaning they are calming on your digestive system. If you suffer from any digestive issues, this is a great selection of infused spices to aid you gut.
You can also pop the remaining chai tea in a container and place in the fridge for a few days until you feel like another one or freeze the homemade chai tea into ice cubes blocks.

*Vegan, Gluten Free & Vegetarian
Makes 2 Lattes
For the Chai Tea:
2 Organic Black Teabags
2 Cups Water
2 Whole Cloves
1 Tsp Ground Cinnamon
1/2 Tsp Ginger
1/2 Tsp Cardamon
1/2 Tsp Nutmeg
1/8 Tsp All Spice
2 Tbsp Honey or Maple Syrup if vegan
For the Chai Latte:
1/2 Cup Homemade Chai Tea (above)
3/4 Organic Coconut Milk, Organic Almond Milk or Organic Soy
1 Tsp Honey or maple syrup if vegan (optional)
- Make the chai tea first. In a small sauce pan add the water and spices (cloves, cinnamon, ginger, cardamon, nutmeg and all spice) bring slowly to the boil keep stirring all of the spices. Let is simmer for 2-4 minutes with just the spices.
- Before taking it off the heat and popping the two black tea bags in. Let the tea bags sit for 5-7 minutes before removing and adding the honey. Stir well and put to one-side.
- In another small sauce pan, add coconut milk (3/4 cup for one drink) and heat until it is just boiling. To make it frothy I whizzed it with a whizz stick. If you like you chai latte sweet, add some more honey.
- For one mug of chai latte add 1/2 Cup of chai tea to 3/4 cup of your frothy coconut milk. Serve with a sprinkling of cinnamon on top.
