Shredded roast chicken, sesame seeds, Australian native finger lime on a bed of spiralised cucumber, cos lettuce and coriander with a soy, honey and garlic dressing hands down has to be one of my most favourite chicken salad inventions.
It is abundant with flavour and will tantalise and refresh your taste buds with a fine balance of sweet and sour. It is a delicious dish for Spring in the Northern Hemisphere and perfect for this time of year in the Southern Hemisphere.

A nutritionally complex charged salad full to the brim of nourishing phyto-nutrients, protein and calcium. Cucumber is not only great for your skin, but brilliant for people who might suffer from excessive sweating! Cos lettuce and coriander (read more benefits here) is great source of vitamin C, fibre and contains chlorophyll which will create an alkalanising detoxifying environment helping your body work at its peak. Shredded roast chicken (made from leftovers of my lemon & sea salt roast chicken) is a great little protein boost, full of essential amino acids which will help boost a healthy immune system and also help repair muscles. Sesame seeds are the highest form of calcium you can get, stand over milk based products to get your calcium-fix! get sprinkling these little numbers on your salads, oats and eggs in the morning. Australian finger limes are amazing, they actually look like red caviar (I am not 100% sure how readily available they are! I bought mine with my weekly Doorsteps Organic delivery) but they are perfect vitamin C booster which will make a salad look great, if you do not have these just add a regular squeeze of lime.
Simple to make and great for pack lunches any day of of the week. Pop the dressing in a little side jar to save your salad from going soggy.
1 Cup shredded pre-roasted chicken
3-4 Cos/Romaine ceaves, finely chopped
1/2 Bunch coriander, roughly chopped
1 Lebanese cucumber, spiralised or lengthly peeled
3 Tbsp un-hulled sesame seeds
1 Australia finger lime or ordinary lime
1/2 Chilli chopped (optional)
2-3 Tbsp Soy Sauce
1/2 Tsp honey
1 Garlic Clove, minced
- In a large bowl add the lettuce, coriander, spiralised cucumber, sesame seeds, lime, chicken and toss well together until mixed throughout.
- Make the dressing by popping all ingredients into a jar or jug and mix well until all honey is dissolved.
- To serve, last minute drizzle the dressing on top of salad and toss again.
