Chicken pesto parcels and butter bean mash is a nostalgic dish for me, my mum used to always make these for the guests at the family B&B, but also for us kids. They were dead simple to make, cheap and just really really tasty. The saltiness from the bacon combined with the punch of flavour from the pesto and the tenderness of the chicken breast is a scrumptious combination.
I have changed it slightly by making my own pesto (rather than store bought which mum often used as she always time hungry) and adding my own butter bean mash for an extra boost of fibre and protein, which really ties this dish together. I generally make them in bulk on a Sunday night and have them for meals during the week when by myself.
