As many of my avid followers know that I love a good leftover dish, where the wheel is reinvented. On the weekend I roasted my lemon and sea salt chicken and had a decent amount of leftovers. Rather than just have a chicken salad something.
I made up some delicious rice paper rolls which included rice noodles, roast chicken and shredded cabbage, spinach side lined with a simple soy sauce to dip as well as a sweet chilli sauce. Perfect for lunch boxes for all ages. You can really add anything to them.
In the past I have rolled my rice paper rolls on clean towels. However, I have found the secret to not getting it stuck in weird places and that is rolling your rolls on baking paper, its a game changer and makes the whole process so much simpler. I found this video quite good if you are still not sure how to roll them.

Mint is a fabulous herb full of vitamin c, to also help reduce smelly breath and aid with digestion.
Rice paper rolls and noodles are a great gluten free alternative to bread rolls. Part of your daily dose of grains, light and makes your feel less bloated.
