Stuffed chilli beef capsicum on a bed of shredded cabbage is a fabulous way to make some nourishing choices for a busy weeks ahead.
It will also not leave a hole in your pocket and will not take ages. A little will go a long way. Kids will love this dish too, you can tone down on the chilli option.
It has been a few days, but it feels like a long time has passed since I wrote a recipe. Life has been a juggling act of work, cooking and lots of study. This is a great recipe to make this Sunday for your meal prep for the week ahead.
Why is this dish good for you:
Lean beef mince will guarantee you the best protein with all of the essential amino acids which will nourish, replenish and repair tissue, skin and muscles.
Cooked tinned tomatoes are high in lycopene (this is the active ingredient) which is a powerful antioxidant and research is still showing that it can aid in prostate cancer.
Kidney beans are such a fabulous source of fibre and protein they will help repair your body and help boost immunity.
Capsicum contains the highest level of vitamin c in its raw state, when cooked it looses this a little but still maintains fibre which will help with digestion.
Cabbage is a great source of C (immunity, cell health), K (blood clotting and bone building) and folate (digestion)
Coriander is a super herb, not only is it a great source of vitamin C and fibre and works well in digestion and helps with the absorption of nutrients. It also acts as a “mop” to oxidised free radicals in the body (it works well with meat dishes) and helps them not cause damage in your body.
