Chilli con carne has to be one of my favourite winter warmers, but I actually love it in summer as well. It is a brilliant thrifty dish to make in bulk for all the family, friends and relatives.

I have made a few versions over the years, try my chocolate chilli or my slow cooked one. There is only a handful of ingredients used and if you are catering for kids, then just leave out the chilli and add it back in for the adults late. I love my chilli with oven baked salty potatoes, freshly grated parmesan, finely chopped coriander and Greek yoghurt.
This dish’ depth has been upped a notch by adding chipotles in abodo sauce. I find tins of the stuff in my local Harris Farm (here is the link to the exact stuff I use) it creates smokiness and most importantly spice to the dish.

Why it is good for you:
When choosing mince don’t go for the cheapest mince on offer in bulk. Try and aim for grass fed beef mince. This will offer a better quality source of protein, when full protein is involved it has all of the essential amino acids which are used for repair, replenish or replace of your bodies tissues. Cooked tomatoes are high in lycopene (this is the active ingredient) which is a powerful antioxidant and research is still showing that it can aid in prostate cancer. Kidney beans are such a fabulous source of fibre and protein they will help repair your body and help boost immunity. Capsicum contains the highest level of vitamin c in its raw state, when cooked it looses this a little but still maintains fibre which will help with digestion.
