Why have I only just got on the chipotle bandwagon? All these years I have been missing out on such a diverse flavour. I love a bit of rich smokey spice and this chipotle stuff does the exact job.
The only thing is its a little hard to get a hold of in Sydney. I literally went into 5 food shops and my 6th I came across it lurking on a back shelf in my local green grocer.
Chipotle in adobo sauce is a deep smokey mexican spicy sauce (adobo) with smoked dry ripe jalapenos (chipotle). I cannot wait to use this on bbq’s this summer, on corn etc. But for the time being I have introduced it to my original hummus recipe and it went down an absolute treat.

1 Tin Chickpeas, drained & washed
2 Lemons, squeezed
1/2 Garlic Clove
3 Tbsp Olive Oil
2 Tbsp Tahini
100g Chipotle in Adobo sauce
Large Pinch of Sea Salt & Ground Pepper
- Grab yourself a food processor. Add all ingedients in together and blitz until a very smooth paste. Season to taste with some more salt and pepper or a little extra lemon.
- Serve with carrots (or crudites), pita bread or crisps.
