Vegan Choc Chip Banana Ice-cream, I am licking my lips thinking about eating this little number all over again. I have a corking one for you today on the blog.
Only two ingredients, vegan choc-chips (made from cacao “nibs”; known as natures chocolate, read more about them here)and ripe bananas. The perfect healthy all year round dessert. Would go really well dolloped on top of an apple crumble (maybe try my sugarfree recipe here)too. I kept mine simple by adding fresh raspberries and a sprinkling of more cacao nibs to my “banana ice-cream”. Great for kiddly-winks and of course adults.
I recently picked myself up some Cacao and Cacao Nibs from my buddies and local Sydney brand Xocolatl Brokers. They sell their produce most Saturdays down in the Bondi Farmers Markets. I would highly recommend picking yourself up some of their cacao or even trying out their amazing Cacao Crackl recipe, honestly that stuff is finger licking good.
Anyway back to the recipe. The beauty of it is you can add almost anything to it; nuts, berries, mint, peanut butter etc. It is also good for you so you can have ice-cream any night of the week.
Horaaah its Thursday and almost the weekend.
Serves 2-4, Make the night before
4 Ripe Bananas
1/4 Cup Cacao Nibs
Pop all ingredients into a blender and blitz until smooth. Place in a freezer tight container and pop in the freezer for 4-5 hours or over night until frozen.
Serve with fresh raspberries and a few more cacao nibs.
