So my chow bow zoodles (zucchini noodles) are a simplified take on the Asian classic sang choy bow (sang choi bao).
This dish is made from organic chicken mince, a combination of fresh coriander, garlic, chilli and sautéed onion. Finished off with tamari (soy) and honey to create depth and flavour, finally squeezed with fresh lemon and served on a bed of finally spiralised zucchini noodles (I use a hand held mandoline to make my noodles, but this one looks like a great option).
A perfect paleo friendly light lunch. All made from whole foods and works well as a scrummy light lunch or dinner.

Organic chicken mince is a winner, it will guarantee you the most best protein with all of the essential amino acids which will nourish, replenish and repair tissue, skin and muscles. Garlic and onion are fabulous, they are a nurturing antioxidant and anti-inflammatory on the body, their antioxidant (quercatin) helps mop up the oxidation of fatty acids. Chilli and lemon juice is high in vitamin C and great to help stimulate blood and digestion. Zucchini is a good source of vitamin c and folate, aiding in digestion and immunity as well as providing an alkalinising effect on the body.
