Rosedog’s Pomegranate, quinoa, feta, mint, almond and kale salad is probably my best combination yet and dare I say probably my all time favourite salad. Sweet pomegranate rich with antitoxidants and high sources of vitamin c; the quinoa is full to the rafters of protein and a brilliant energy booster, kale known to many as “the queen of the greens” full of protein, fibre and folate.
This salad is packed with great nutritional value and looks and tastes very fancy. A brilliant one to sideline Christmas lunch this year. Costs around $3.00 per serve, making it the best value salad out there this Christmas. It is so simple to make.

Serving for 1-2 people
3 to 4 Large Kale Leaves, washed, de-stalked & finely chopped
4-5 Mint Leaves, washed finely chopped
1/2 Cup Cooked Red Quinoa
1/2 Cup Feta, crumbled
Sml Handful Raw Almonds, roughly chopped
1/2 Lemon, Squeezed
1 Tbsp Olive Oil
Squirt Honey (optional)
Salt & Pepper
1. Grab yourself a large salad bowl. Add pre-cooked quinoa which has had time to cool.
2. Add finely chopped kale, mint, feta, pomegranate and almonds. Toss the salad so all is evenly spread.
3. Add lemon juice, olive oil, small squirt of honey (optional)and a good pinch of salt and pepper. Mix through. Serve with a few more pomegranate seeds sprinkled on top.
Goes really well by itself for a light lunch or a fabulous side to any Christmas lunch.
