This was a lovely light side to a steak. Citrus is very much in season this spring in Australia at them moment and the fruit is at its most tasty.
I picked up the juiciest organic grapefruits from the local farmers markets at the weekend. If you are nearby a markets at the weekend, definitely try and pick yourself up some fruit and veggies for the week, they are almost always third of the price, most likely to be in season, plus you are supporting small local businesses. It is a no-brainer in my mind.
The butter beans were lightly fried in garlic, rosemary and olive oil. Freshly squeezed lime and lemon, fresh basil leaves were tossed through, loaded onto a plate scattered in grapefruit segments, topped with a sprinkling of goats feta, sea salt and pepper. Although a selection of flavours I wouldn’t normally use together, the results were light, refreshing and zesty and to be honest perfect. A great salad on its own, but also a lovely side salad to a meat dish or BBQ.

Grapefruit, limes & lemons are high in vitamin C, that is not only great for immunity, but will help the collagen (think wrinkles!) and bone formation as well as an antioxidant helping mop up free oxidising radicals floating in your body which could cause oxidative stress and harm.
