I have a simple little breakkie number for you. It will get you boosted full of goodies including protein and fibre to kickstart your day. Dippy green eggs made with organic eggs, grated zucchini, parmesan and a pinch of souk spice to top it off.
Eggs are a great recovery for post exercise and will also keep you full until lunch time. A grated zucchini adds extra fibre and nourishing greens for your recommended daily intake.

2 Organic Free Range Eggs
1 Sml Zucchini, grated
10g Parmesan, finely grated
1/2 Tsp Souk Spice
Sea Salt & Pepper
To Serve 2 slices sourdough, toasted
- Pre-heat oven to 180c. In a small oven proof ramekin dish. Add grated zucchini, half of the souk spice and toss around together, a pinch of sea salt and pepper.
- Crack the eggs in and finish with grated parmesan, sea salt and pepper.
- Pop in the oven for 15-20 minutes.
