If some of you have been following my instagram feed, you will know that this recipe was an absolute corker made with some new gifted ingredients from some lovely Sydney locals.
This flourless cake is awesome (there are a few pictures of it as it photographed so well!) it is perfect for people who suffer from gluten and lactose intolerances and who are dairy free. Chocolate orange is a match made in heaven, the two flavours compliment each other so well, producing a decadent depth of flavour. The style is similar to my flourless brownies (try them or this one this weekend, they are awesome).
It was smothered in a fabulous vanilla flavoured dairy-free coconut yoghurt from Hello Coco, the lovely Courtney is located in the Northern Beaches, but you can find her scattered selling her delicious flavours of coconut yoghurt up and down the coast.
This number was then topped with fresh berries which are just coming into season, so they are currently in abundance and super reasonable.
The secret flourless ingredient is “butter beans” yes a savoury tinned bean. They make such a perfect addition to this cake as they carry whatever the flavour is added to it. The cake remains, moist, dense and fudge-like. I added some fabulous wild orange essence, which is edible and was gifted to me from Spacious Being who advocates a wonderful range of essential oils that you can use in food which cut through the cocoa perfectly.
Why it is good for you:
Free range organic eggs which contain all of the essential amino acids in protein which are necessary for nourishing, replenishing and repairing tissue, skin and muscles.
Butter beans are a fabulous source of fibre and protein, they will help repair and replenish your body as well as boost your immunity.
Coconut yoghurt is a great dairy-free or lactose-free alternative to yoghurt, which is lighter and more easily digestible, this particular yoghurt has pro-biotic enzymes which will help your gut, thus helping to protect our immunity. Coconut milk is full of the good fats, it is also a source of potassium (helps with fluid balance in the body and a steady heart beat)
Berries are a great source of vitamin C (for immunity & wrinkle), potassium (for fluid balance in the body), pectin (a rich source of fibre that can help lower cholesterol) even better for you when they are in season. They are full of antioxidants which will help mop up oxidising free-radicals in the body.
