You know how much I love breakfast, well this is another invention I did with a load of delicious very large flat mushrooms I picked up from the Randwick farmers markets on the weekend. This dish is a ridiculously simple breakkie for the weekend, you can have them for lunch and also dinner.
Under five ingredients to make this. It is gluten free, paleo friendly and can be dairy free friendly too where you can substitute the parmesan for a dollop of homemade hummus (try my tasty & simple recipe here)

Mushrooms are a great plant based source of niacin (part of the vitamin B group) this has been known to help with anxiety and depression. They also contain the highest source of immune-boosting antioxidant ergothioneine which is an excellent defence against colds and flu.
Eggs are a full protein that contain all essential amino acids, ideal to help your body replenish, nourish and heal your skin, tissues and muscles.
Thyme is a great herb, it has a carminative effect on the body, brilliant for relieving irritability, dryness in the respiratory system and is great for treating gum disease and infections.
Watercress is a great source of chlorophyll (the green pigment that gives it the colour), it is perfect to help your body detox and cleanse. By eating watercress will help your body have an alkaline environment, thus helping your body work at its best.
