This is a brilliant alkalinising green juice made from some of the best organic seasonal ingredients. A perfect juice to help aid digestion, boost your immune system and contribute to some of your essential daily vitamins and minerals. A hydrating and refreshing pick-me-up start your Monday.
I generally like my juice without the pulp (fibre) however the fibre is essential if you are going to be making a juice like this. I sieved my juice to remove the bulk of it and then ate the fibre separately. Some people make it into fritters or add it to their morning museli or granola.

Serves 1 (or two drinks for kiddies)
1 Lemon, squeezed
1 Organic Pink Lady Apple, peeled
2 Kiwi Fruit, peeled
3 Thumbs Fresh Ginger, grated
1 Cup Coriander Leaves
1/2 Cup Mint Leaves
1 Lebanese Cucumber, finely chopped
400ml Organic Coconut Water
- In a food processor or using a whizz stick (or nutri-bullet), add all ingredients in and blend until smooth.
- Serve with all of the bits in (depending on preference) or sieve with a clean teatowel, squeeze out the juice into a jug then pop into a glass. With the remaining fruit fibre, load onto museli, sprinkle on some organic greek yoghurt or just eat by itself.
