I absolutely love smoked salmon and I thought today that I would bring you along with an old childhood memory which my mother used to whip up when a few were coming over for supper. The perfect pre-dinner nibbles which are also fabulous for a wrap for lunch time of smoko. Highly recommended to make the day before you serve. Simple, cheap and easy to make. Healthy too as full of omegas from the oily smoked salmon.

2 Wholemeal Wraps or Rice Wraps for Gluten Intolerant
150g Smoked Salmon
2 Heaped Tbsp of Philadelphia
1 Lemon, Squeezed
3-4 Sprigs Dill, finely chopped
Small Handful Rocket Salad, Washed
Salt & Pepper
1. In mixing bowl add philli, lemon juice, dill, salt & pepper. Mix thoroughly until a smooth paste.
2. Grab a cake spatula, grab your wraps, spread the philli mix evenly onto the wraps, add a few more leaves of dill.
3. Add a layer of smoked salmon across the wrap, half a handful of rocket. Salt, pepper then roll. Cover with cling film and wrap in the fridge until the next day.
4. Slice in half for a lunch time feed. Or into little slices for a few pre-dinner nibbles
