Caesar salad has to be one of my favourite salads, I remember it being really my first introduction to salad recipes in the late 90’s. Where my family ventured to Canada for a ski-trip, after and intrepid journey we arrived in the beautiful Rocky Mountains to be greeted with awe-inspiring scenery in the small ski village of Banff, the first bite we had after the long trip was a Caesar salad.
The continuous love affair with this salad has remained strong. I “jujjed” up this recipe from the old classic. It might appear odd but I halved the cos lettuce then gently heated it in the oven. The results were fabulous and I would highly recommend a Caesar done this way. Sidelined with anchovies and lemon, shredded chicken (thanks to the leftovers from this recipe), homemade paleo tahini caesar dressing, topped with a soft boiled egg.
A great light but nourishing salad for a weekend lunch for the gals, might need to be bulked out with croutons for the boys! Makes a lovely starter, where you can place it in the middle of the table, then it is a free for all.
