Kale and basil pesto is a delicious basic pesto which can go with so many different dishes. Toss it with pasta, spread on fresh bread with some ripened vine tomatoes, a wonderful topping for lots of different soups, stuff into a chicken breast and pop in the oven are to name just a few. It is vegan-friendly too. I went for kale and basil with walnuts. If you have made too much, pop into some ice cube trays and freeze, you can use at a later date.
Super Simple too.
1/4 Cup Lightly Toasted Walnuts
2. Grab yourself a frying pan place over hob and gently toast walnuts for 5 minutes, making sure you don’t burn.
3. Toss these walnuts into kale/basil blend and blitz, until an even consistency.
4. Add oil, lemon juice, garlic, salt & pepper. Blitz again. Taste and season with a little more oil/salt or pepper if needs be.
