Tuna Nicoise is a classic recipe and something that is healthy, light and full of protein. Lazy Nicoise is the not so glamourous little sister, but equally tantalising. Spinach, Poached eggs and line caught tuna slices with a squeeze of fresh lemon juice is a winner. Quick, cheap and simple to whip up. A great go to lunchtime feast.
1 Cup Baby Spinach Leaves, Washed
1 Free Range Egg, Poached
1 Tin Line Caught Tuna Slices
Salt & Pepper
1. Grab a small saucepan. Fill with boiling water, add a capful of cider vinegar and take off heat to poach you eggs.
2. Layer up your plate with spinach. Squeeze lemon over spinach.
3. Add tuna flakes, make sure oil is drained from tin.
4. Pop poached egg on top. Add a good pinch of salt and ground pepper.
