Although the weather is not telling me its winter (tops reaches 24c today! Oh I love you Sydney), the start date of winter actually kicks in next week! Its telling me lots of winter foods will be hitting the By Rosie recipe pages.
Crumble to me screams winter warmers. This one in particular was a delicious combination of apple and date topped with a salty buttery coconut oaty crumble, baked in the oven until bubbling. I know I have done many crumbles before, my rhubarb and muscat is a golden one (recipe here). But I just love them. They are super simple, cheap and a great money saver for when mates are coming over.
Even better make mini ones, for some reason they seem a little more fancy. I love mine with custard, try with cream, yoghurt, coconut yoghurt or ice-cream (would go nicely with some of my vegan banana nicecream!)
The best thing about this crumble, it is sugar free! The natural sweetness comes from dates and the apples, You can also make it vegan friendly by replacing butter with coconut oil. By this I think with a dollop of fresh Greek yoghurt would make it the most perfect winter breakkie too.
This one is also good for you and here is why:
Apples are pretty much the most perfect snack. They contain a good dose of fibre, vitamin C (in their raw state). They contain a powerful antioxidant known as quercetin that has been known to help brain cells from degeneration (according to this book). Their high amount of fibre will aid with digestion through the small and large intestine.
Dates are also high in potassium (great for fluid balance in the body) according to this book, it can also reduce the risk of cardiovascular disease, as well as supporting muscle function, they are also a good source of naturally formed sugar and great alternative to sweetening puddings.
Oats are fabulous slow release energy boosters and great to kickstart your day, they contain vitamin B’s which is known to help improve your mood, anxiety and PMS. A high level of soluble dietary fibre which is great for your circulation and for digestion.
Coconut contain manganese which can act as an antioxidant and some essential amino acids for helping your body repair and nourish.
Cinnamon has a wonderful carminative effect on the body and will also help balance blood sugars in the body.
Try this for your next do with all of your mates around or even have for breakkie.
