I have been meaning for sometime to pop up this simple yet nutritionally fulfilling breakkie. It will take 5 minutes to throw together and you can literally add any fruit that you can get your hands on, the possibilities are literally endless.
I added a squeeze of lemon, organic Greek yoghurt, fresh banana and some of my homemade granola (here is one of my delicious granola recipes and I have another gluten free one coming tomorrow, so stay tuned) drizzled in raw honey. This dish can be vegan if you swap the greek yoghurt for coconut yoghurt and the honey for maple syrup.
A delicious, fresh and nutritious start to your day. It is also brilliant as a healthy dessert for your pals. Be sure to hang on to the seeds, they are peppery and I have a recipe coming up for those too.
Why it is good for you:
Papayas are a fabulous antioxidant rich with betacarotenes (plant form of vitamin A), vitamin C and flavanoids, helping us with our immunity, they are high folate making them great for digestion and potassium. Think of these little fruits as protectors. They contain the enzyme papain which is often used in traditional medicine for digestive health.
