The combination of peach and banana are an utter match made in heaven. I know I have done the banana oaty muffins recipe before and they have been such a hit with so many from little tiny kiddly winks, school kids, adults and the oldies.
A real basic flour-free recipe taken to the next level with the addition of peaches. These divine stone fruits are in season at the moment as we creep in Autumn, I picked a whole heap up at the farmers markets on the weekend. I thought I would add these little bad boys to the mix and I know you will love making them too.
You throw everything into a bowl, stir, heat the oven, pop into muffin tins for 20 minutes, as simple as that. It also has no refined sugar, only sweetened with 1 tbsp of natural raw honey, it is optional to just use the ripe banana for sweetness (I might give that a go too).
These are great low GI mid morning snacks, protein pick-me-ups, perfect for kids lunch boxes and great for an arvo slump.
They are good for you too:
Peaches are a great source of beta-carotene this is the red orange colour which is visible in fruits and veggies. It is the precursor to help certain vitamins such as A to be absorbed into the body. They are also a good source of fibre to help with digestion and also the mineral potassium which helps with your bodies fluid balance and muscle contractions.
Bananas are a good source of potassium (helps you keep alertness and prevents muscle fatigue – great for post workout) and fibre which also include tryptophan and B6 which can help with depression and anxiety and help you feel less stressed as well as helping you combat sleeplessness. This book is a great one for more foodie information.
Walnuts are unique among the nut varieties, they are fabulous for your brain (they also look like little brains) they contain large doses of alpha-linoleic acid, one of the two major types of omega 3 fatty acids. I can be known to help reduce inflammation and joint pain in the body.
