I am such an egg-fan when it come to breakfasts, they are quick easy and will provide you a dose of your daily protein which is great for nourishing, replenishing and healing skin, muscles and tissue.
I love eggs any way. But boiled does always bring back a sense of nostalgia. I have taken these little boiled numbers to the next level, by replacing the toasted soldier with prosciutto wrapped asparagus, quickly roasted in the oven. A great breakkie to impress on a lazy weekend. But I also get up a little earlier and have these during the week.
The saltiness from the roasted prosciutto combines with the asparagus dipped in a runny egg yolk, nothing can really compare…I also loved to add my roasted capsicum dip as well to this.
