As much as I love slow cooked food, I love a dish that is quick, simple, nourishing and delicious. My prayers were answered with this quick creamy chicken red curry mixed with fresh rocket and spinach and quinoa. A lovely little dish to satisfy even the most hungry of people. I also made this number mid week and it makes the most awesome left overs to take to lunch the next day.
