These bad boys are fabulous sugar-free mid morning snacks, pre-workout and afternoon pick-me-ups full to the brim of goodies; high in protein thanks to the sunflower seeds and desiccated coconut. Healthy fats & anti-inflammatory thanks to the coconut oil. High in antioxidants thanks to the apricots, dates and goji berries. Simple to make. Healthy alternatives to unhealthy snacking
Makes about 15-20 Bliss Balls
1.5 Cups Dried Apricots, soaked for 20 minutes
1/4 Cup Dried Dates, soaked for 20 minutes
1/4 Cup Goji Berries, soaked for 20 minutes
1/2 Cup Desiccated Coconut
1 Cup Sunflower Seeds
2 Tbsp Coconut Oil
1/4 Cup Almond Meal
2 Tbsp Honey
1. In a large bowl, add apricots, dates and goji berries, pour boiling water over them, which just covers the fruit and soak them for 20 minutes.
2. In a food processor add coconut, sunflower seeds, almond meal and blitz until all fine.
3. Drain the dried fruit bowl and add to food processor, add honey and coconut oil. Blitz until a tough paste type mixture.
4. Roll into half golf-ball sized balls and lightly roll in a little bit of desiccated coconut.
