I loved this little invention of roasted dutch carrots served with a garlicky lemon tahini. It is the most perfect side for a Christmas feast. I would love to have this alongside a roast chicken (I think this recipe or this one would be the go!)
This would also be a lovely scattering on some raw spinach, add some toasted pinenuts and you have a lovely side salad to perhaps some roast lamb (try this sticky lamb recipe here)
Carrots of all colours, I loved picking up these purple carrots from my local farmers markets, they are by Farmer Greg’s and these guys are all certified organic and the price tag isn’t too hefty.
A little tip if you don’t always buy organic, be sure to wash your fruit and veggies by soaking them in a sink full of water with a couple of capfuls of apple cider vinegar. The apple cider vinegar helps leach the pesticides used in non-organic fruits and veggies.
I dressed the carrots in some tahini, lemon juice and roasted garlic bulbs.
*Lovely jug by flax ceramics, perhaps a great little stocking filler, you can pick it up here with a gorgeous little sugar bowl.
Why is this good for you:
Carrots are rich in beta-carotene too and also vitamin A (good for your eye health) and an antioxidant which helps mop up oxidising free radicals in the body.
Tahini is made from ground sesame seeds, these contain some of the highest form of calcium (yes even more than milk!!) its great for your bones, nerve function, can help protect against hypertension, helps maintain a healthy body weight and good for your immunity.
Garlic is a great anti-bacterial, anti-fungal and is perfect to help boost your immunity.
