Rosedog’s raw zucchini (courgette) salad with grapes, baby tomatoes and feta, smothered in my vegan kale and basil pesto is a beautiful healthy salad fit for champions, like yourselves! I have purchased an awesome spirulizer, which makes these beautiful spaghetti style ribbons of the zucchini (courgettes). Its a great light lunch, or can be used as a side salad to a big fat juicy steak. No cooking required too! just drop and toss. Less than five minutes to make.

2 Zucchinis (Courgettes), spirulized or grated
Handful Fresh Mint, finely chopped
Cup Grapes, halved
Cup Baby Tomatoes, halved
Handful Feta, crumbled
2 Tbsp Dollops of Rosedog Kale & Basil Pesto
Salt and Pepper
All you need to do is to grab a large salad bowl. Drop all ingredients in and then toss with some tongs, season with salt and pepper.
