I absolutely love a good cracker, I love them with cheese, hummus, pesto or even just by themselves. There is a growing trend in juicing and I thought that I would find out what you can make out of the left over fibre (which is important to consumer as well).
This vegan cracker recipe is a perfect one for you. If you haven’t juiced or do not have a juicer, don’t panic you can still make these crackers. Just make sure you finely grate the carrots and mince the ginger. These bickies are perfect little snacks to have all day long. Great to pop in your kids lunch box too. They are vegan, paleo and nut free.
Why it is good for you:
Carrots are a good source of antioxidant beta carotene which is converted in the body to vitamin A, this benefits your eyes, skin, bones and hair. They are also a good source of fibre which will aid in digestion. Be sure to consume a carrot with a small amount of fat, this helps release more of the beta carotene. Ginger is a powerful root herb, great for immunity, infection and can be used for motion sickness, pain relief and can also aid digestion. Flaxseeds are awesome too (although don’t consume too many), they are high in omega 3 (if you are veggie or vegan get incorporating these into your diet), helping lower cholesterol, maintains brain health and helps increase the process of making serotonin (happy drug!). Sunflower seeds are high in magnesium and potassium which is essential for healthy nerve function, heart and boosts you with energy.
