I bet you are asking yourself how a potato salad can be sensational. You are probably imagining that weird unappetising overly mayonaised potato salad that you get in hotel and restaurant buffets.
Don’t be put off by that! I have been recreating this awesome potato salad for quite a few years now and it is my dish to bring when I am invited over a for a BBQ. Why don’t you give it a whirl this weekend, its time to give the old potato some stature as it gets such a bad rap for being a heavily carbed creature. This dish was a combination of desiree potatoes, smokey bacon, finely chopped spring onion, parsley and a mustardy, lemony mayo dressing all combined. Perfect side to any feast, especially a BBQ.

Potatoes get a really bad wrap for just being themselves! However they are incredibly nutritious and available almost all year around. It is highly nutritious and low in kJ’s. Baked potatoes are probably the best way to eat potato, you are losing very few nutrients. They are also rich in potassium which is great to help reduce hypertension as well as help your body maintain a good fluid balance in your body. NB. never ever eat green potatoes or chop off the green bit and still eat it, they are toxic to humans.
