I absolutely love a nourishing and simple tomato soup for winter to warm the cockles. This is a must make over a weekend in winter. It will take about 4 hours, but the results are really fantastic and well worth the wait. I used a slow cooker to make my soup, but if you don’t have one not to worry, just have the oven on 140c and place it in there with a lid on for 4h also.
I got my tomatoes from the imperfect ranges at Harris Farm, these fruit and veggies look funny but they taste exactly the same and are generally cheaper.
Tomatoes and especially cooked tomatoes have a high levels of lycopene which is a carotenoid, this is a powerful antioxidant in tomatoes and is responsible for their red colour.
According to Breverton (2011) lycopene is a wonder chemical which when absorbed into the body, helps to prevent and also repair damaged cells by inactivating free radicals in the body. It has thus been credited for reducing wrinkles. A perfect antioxidant soup to help repair and nourish the body.
