So today is my birthday!! I thought that I would share a recipe I did last weekend. It is scrumptious and a definite must to make on a drizzly day.
The smokey-ness from the bacon combined with the energy boosting puy lentils, celery, onion and covered in homemade broth is effortless but an effective soup that will help sustain as well as nurture you.
Why is this dish good for you:
Puy green lentils are firmer and stick to their shape compared to the other red varieties. They are great for salads and don’t go mushy. Not only do they have a low GI, which helps sustain energy levels, they are also a good protein source and high in fibre aiding digestion. Bacon are full essential amino acids, protein helps your muscles, skin and tissue repair and protect. Celery is a great source of fibre, according to this book, celery has been thought to help treat inflammatory cases such as gout and arthritis. It gives so much flavour to soups, broths and roasts. Onions are a fabulous, they are a nurturing antioxidant and anti-inflammatory, it will help support your optimum health.
