Happy New Year to all of you lovely lovely people! I hope that you are recovering after the back log of festivities that are certainly still happening. I spent a very different Christmas and New Year in Sri Lanka (if you follow my instagram you will be able to see what I got up to). I will be chatting more about that later as I hope to do some health tips for travelling to similar places like Sri Lanka coming up in the next month.
My spicy and sticky chicken spinach salad with pineapple and red cabbage drizzled in a homemade mint dressing was certainly a nutrient dense packed salad, which guaranteed a good dose of vitamins and minerals, setting me up for a long summer ahead.
The best thing I love about this salad is it take about 10 minutes to throw together, a really great dish for any night of the week, make double and have it for lunch the next day.
Why is this dish good for you:
Organic chicken will guarantee you the best protein with all of the essential amino acids which will nourish, replenish and repair tissue, skin and muscles.
Pineapple is a good source of bromelain this is the enzyme in pineapples, this book suggests that has some great anti-inflammatory properties. It is also a great source of the trace mineral manganese, which the body needs for enzymes to function well.
Raw Spinach is a great leafy green packed with folate (healthy blood and coronary), vitamins A (eye health), C (immunity) and B6 (for protein metabolism) and potassium (fluid balance in the body)
Raw Cabbage is a great source of beta carotene (this is the precursor that helps vitamin A do its job – so great for your eye sight, helps with the making of protein in the body as well as supporting reproduction) a good source of vitamin C (immunity, cell health), K (blood clotting and bone building) and folate (helps reduce birth defects).
Mint is a fabulous herb full of vitamin c, to also help reduce smelly breath and aid with digestion.
