This hearty soup in my eyes is a winning Winter warmer, guaranteed to beat those blues. Warn off any colds, flu or niggly coughs. Simple to make with only a handful of ingredients.
1 Red Onion, finely chopped
1 Chorizo Sausage, roughly chopped
2 Bunches of Brocolli, roughly chopped include stalks
750ml Vegetable Stock
Pinch of Seasalt and Pepper
1. Heat a large sauce pan with a splash of oil. Add the chorizo and let it sizzle until browned. This will release all of the flavour of the chorizo. Add the red onion and let it fry until soft.
2. Add the broccoli and then the stock.
3. Bring to the boil and let it slowly simmer until broccoli is soft.
4. Blitz with a whizz stick, until smooth. Season with an optional dollop of greek yoghurt and a sprinkling of some lightly fried chorizo.
