These are a fabulous vegetarian alternative to burger patties, healthy and full of protein, iron and rich in good fats. Brilliant for breakfast, lunch time feed or supper sided with a big delicious garden salad, topped with smoked salmon and a big squeeze of lemon. They really are suited to so many alternative foods. Simple & easy to make too.
4 Free Range Eggs
1 Cup Red Quinoa, cooked
3/4 Cup Quinoa Flakes
250g Frozen Spinach, unfrozen by hot water
Handful Basil Leaves, finely chopped
Large Pinch Salt
Large Grind Pepper
1 Tsp Turmeric
1 Tbsp Coconut Oil
1. In a large mixing bowl add cooked quinoa, quinoa flakes, spinach, basil, salt, pepper, eggs and turmeric and mix thoroughly.
2. Heat a large frying pan with coconut oil. Add a pattie-size dollop to frying pan and cook either side for 3-4 minutes.
3. Serve on a large garden salad, sprinkling of fresh basil. Optional salmon and a squeeze of lemon on top too.
