This is a wonderful light and cheery summer crunchy salad, full of goodies and great health benefits; fennel (great for acne, stimulates the liver and improves fat digestion), cucumber, celery (great for arthiritus, stimulates and eliminates the excretion of uric acid) mint (a winner for heartburn), tomatoes and zucchini. Dressed in a lemony greek yoghurt and garlic (a great antibacterial), topped with an optional smoked salmon to boost you full of Omegas, which is great for your skin. A fabulous light lunch or supper and one to whip out on a hot summer’s day. Hope you enjoy this little number.
1/2 Sml Lebanese Cucumber, finely sliced
1 Sml Zucchini, spirulised
3-4 Cherry Tomatoes, quartered
1 Sml Fennel, finely sliced
1 Celery Stick, finely chopped
Handful Mint, finely chopped
2-3 Smoked Salmon Sliced, finely chopped
2 Tbsp Greek Yoghurt
1 Sml Garlic Clove, crushed
1/2 Lemon, Squeezed
5-6 Mint Leaves, finely chopped
Salt & Pepper
1. In a mixing bowl, add cucumber, zucchini, cherry tomatoes, celery stick and mint and mix together.
2. In a small bowl add all dressing ingredients and season to taste with the salt and pepper.
3. Add about half the dressing to salad and toss to ensure all salad is covered.
4. Sprinkle smoked salmon on top and a few extra mint leaves
