Raw Beetroot, fennel, spinach, pink lady apple, mint & feta salad with a lemon dressing is beyond a match made in heaven. A delicious light lunch for searing hot summer days or a great side to chicken wings or mint lamb that have just come off the BBQ. It felt like a summers day yesterday in Sydney, although being the middle of winter and I was craving a salad like this one.
Grated raw beetroot (member to the spinach family) has been shown to increase antioxidant enzymes in the body, production of white blood cells to help fight infection and is full of goodies to help your intestinal tract, fennel is another winner helping stimulate the liver and improves fat digestion. Spinach is a fantastic source of iron especially tossed in freshly squeezed lemon juice. Pink lady apples are great sour sweet addition plus they help massage the gums to promote healing, a great addition. Finished off with crumbling feta.
All in all a healthy busting summertime salad coming right up and takes 10 minutes or less to whip up.
All of the ingredients above are very much in season (in Aus), this means also cheap, so hop on down to your local green grocers to pick them up.
1 Lg Beetroot, skin left on, grated
1 Fennel, grated
Lg Handful Spinach, washed, roughly chopped
1 Pink Lady Apple, finely chopped
Handful Mint Leaves, finely chopped
Handful Feta, cubed
1 Lemon Squeezed
Dash Olive Oil
Salt & Pepper
1. I used a food processor to grate all of my beetroot and fennel, it made it so much quicker, but you can do it by hand, use the roughest option, so pieces are still chunky. Place grated fennel and beetroot into a a large bowl with spinach, apples, mint and toss, so all mixed through.
2. Add Lemon juice, olive oil, salt & pepper and toss again.
3. Serve into bowls and finish with topping of crumbling feta.
