I have been meaning to share this mouth watering combination which I know has been done time and time again but I so loved adding it to a BBQ that I had on the weekend.
Watermelon, feta, mint and asparagus is a delectable and delightful combination of flavours which will sure entice your guests long hot summery dinners.
What is even better is it is wonderfully nourishing for you too and deliciously light. Try adding this to a sunday feast (my slow cooked sticky lamb, sea salt chicken and beercan chicken are my top picks this week)
Watermelon is a great source of magnesium (for sleep, joints), potassium for fluid balance in the body. It also contains lycopene (makes it that reddy/pink colour) which is also an antioxidant also found in tomatoes this can help your body mop up oxidising free radicals in the body which can cause damage. Research has shown that lycopene can help lower the risk of prostate cancer.
Mint is considered a great aid for calming digestion. It is also considered a great functional alkaline food which many nutrition journals have supported the benefits of alkaline foods helping with improving bone density as well as its detoxfying properties thanks to its antioxidants. It also can help fight mucus, so perfect for lurking colds and flu. It is also a good source of vitamin C when raw to help boost immunity.
Asparagus contains a good source of beta carotene, a multitude of vitamins and a handful of spears provide you daily vitamin K1, great for bone and blood health. These guys state, asparagus has been used to help with inflammation and urinary tract infections, joint pain and hormonal imbalances. It is supported by this book to say that asparagus is high in folic acid and potassium as well as helping normalise cell growth.
